How can you still enjoy your vacation, eat some of the foods you love, but not cause your weight to sky rocket when you get home?

Easy.  Stay active.  Do not deprive yourself of some of the foods you love while you're on vacation.  It's vacation!  Try to lighten up about your diet and enjoy yourself.  You can get a good balance (don't go overboard!) by making it a point to exercise every day.  For example, I told you I walk every morning for an hour on the beach.  I also spend most of the day in the pool swimming with my son.  He loves to move around - the movement is also burning calories.  After dinner, if there are shops in the area, do some window shopping.  All that walking around will cause you to burn calories.  If you can, rent bikes, if things are close by try to ride bikes as much as possible.  Most of the time these things will be fun and you won't even know that you're burning off last night's dinner.  Lastly, choose only the fatty options that are really something that you love.  I go crazy for southern clam chowder.  I will have a small cup while I'm down here.  Luckily for me I love shrimp cocktail and crab.  If you really love ice cream get one small scoop or settle for frozen yogurt which I think is just as good if that's what your palette is used to.  It's all about that balance.
